I asked around and these video could be helpful at understanding displacement. However to create a softer transition between peaks and valleys of a texture, you would need to reduce the contrast of the texture map. Essentially the highest points are white and the lowest points are black. In order to achieve a softer texture, you may want avoid black altogether and / or experiment with a more gradual gradation between black and white.
